Mei Lan prefers crisp, juicy bamboo shoots to bamboo stems. Bamboo shoots are to Mei Lan, like orange and grapefruit in autumn, or the purple of bayberry in summer.  Like pure soup, there is no need to put salt and leek at the beginning of spring or woad at the end of autumn.
